Buldak Sauce: The Rise of a Global Spice Challenge

Where Buldak sauce came from, how a Seoul chicken restaurant led to a global spice challenge, how hot it is, and which bottle to try first.

Buldak means “fire chicken,” and the sauce in the bottle is the same one that made the noodles famous. Buldak started as an instant noodle that comes with its own sauce packet, and that packet is where all the flavor and heat live. The bottle lets you put it on whatever you want. Here’s where it came from, how it blew up, and how hot it really is.

Where Did Buldak Come From?

Buldak is Korean for fire chicken, a style of spicy stir-fried chicken that restaurants in Korea serve. The original noodle’s full name, 불닭볶음면, translates to fire chicken stir-fried noodles.

The dish had its own moment before the noodle did. Wikipedia says the name was registered in 2001, the dish got popular around 2006, and the trademark was freed up on April 30, 2008. The trend has faded since, but fire chicken was already a Korean craze before anyone thought of putting it in a packet.

Samyang, the company behind the noodle, was not in a great spot back then. It introduced Korea’s first instant noodle in 1963 and dominated for years, but a food-safety scandal in 1989 ended that. The company was later cleared, but the damage was done. Nongshim’s Shin Ramyun has been Korea’s top-selling ramyeon since 1981, and Samyang sat third or fourth in the market. Then the Asian financial crisis of the late 1990s pushed the company into bankruptcy.

Kim Jung-soo joined Samyang in 1998, right in the middle of that crisis. She was a homemaker at the time. With help from her father-in-law, she started in the sales department and spent her early years visiting sales offices around the country, according to Asia Business Daily. She is now Samyang’s vice-chair.

Then comes the restaurant. Around 2010 (Samyang’s own site says 2011), Kim was in Myeong-dong, a busy shopping district in central Seoul, with her daughter. The Korea JoongAng Daily says there was a long line outside a spicy chicken restaurant, and the customers inside were sweating and fanning their tongues, clearly in pain and clearly loving it. Asia Business Daily tells it a little differently: she watched her high-school daughter finish a plate of spicy dakgalbi, a stir-fried chicken dish. The details shift depending on who’s telling it, but the point is the same. People were suffering happily, and she wanted to put that feeling into an instant noodle. The Seoul Economic Daily quotes her saying she wanted a spicy flavor that had never existed before.

When Samyang’s food scientists made prototypes, Kim kept telling them to make it spicier. The Korea JoongAng Daily reports that the trial and error took 1,200 chickens and 2 tons of sauce before the recipe was done. Asia Business Daily adds that Kim tasted it every day.

The noodles launched in April 2012, and they did not take off right away. Early reviews said the noodles were too spicy to eat, and some people dismissed them as a novelty. Sales were slow at first.

Buldak is the product that turned the company around. In the first quarter of 2024, Samyang’s operating profit passed Nongshim’s for the first time since Korea’s electronic disclosures began in 1998, according to the Korea Herald. For the full year it made 344.2 billion won in operating profit. In 2023 Samyang renamed itself Samyang Roundsquare, and the Korea JoongAng Daily puts Buldak at about 80 percent of its total sales today.

How Did Buldak Get So Big?

A dare, mostly. In 2014 the YouTube channel Korean Englishman posted a video where host Josh Carrott challenged friends in the UK to finish the noodles as fast as they could without drinking anything. Other YouTubers around the world copied it, and the Fire Noodle Challenge was born. A Samyang official told the Korea Herald in 2023 that the brand’s global success comes from that challenge, because it turned eating the noodles into a game.

I think the flavor keeps people coming back, but the challenge is what got them to try it in the first place. By 2017, Buldak made up more than 85 percent of Samyang’s exports, according to Wikipedia. Samyang says it sold its first billion packs that same year and passed 10 billion in May 2026. It also says exports started with Japan, Germany, and New Zealand, and the brand now sells in more than 100 countries.

And the company keeps leaning into the spice challenge idea. The Korea JoongAng Daily lists dance challenges, timed eating contests, a booth at Coachella in 2025, and a K-pop collaboration song, BoyNextDoor’s “Hotter Than My EX,” that passed 100 million music video views in two months. On October 1 this year, Buldak and Samyang’s US arm set a Guinness World Record for the most videos of people eating instant noodles uploaded to TikTok in one hour, with 355 people posting.

The noodles even got hot enough to bother regulators. In June 2024, Denmark’s food authority recalled three of them over capsaicin levels (capsaicin is the compound that makes peppers hot) and said a single packet carried a risk of acute poisoning. About a month later it reversed the recall on 2X Spicy and Hot Chicken Stew and kept the ban on 3X Spicy.

How Spicy Is Buldak Sauce?

Pretty hot. If you can’t handle spice, you’ll be grabbing milk by the third bite. If you’ve ever ordered a level 3 at a Thai restaurant, started eating, and looked over at your friend like “oh my gosh,” that’s about where this lands.

It’s also really tasty, which is why it’s worth the burn. The heat is real, but there’s flavor underneath it, so you keep going back for another bite even while your face is telling you to stop. That’s the whole appeal, and it’s enough heat that I get why people built a spice challenge around it.

Is Buldak Sauce the Same as the Noodle Packet?

Yes. The bottle is the same sauce you get in the noodle packet, so if you’ve had Buldak noodles you already know what it tastes like. The difference is that you control how much goes on and what you put it on. The three bottles also match three of the noodle flavors: Original, Carbonara, and 2X.

Which Buldak Sauce Should You Try First?

There are three: Buldak Original Hot Sauce, Buldak 2X Spicy Hot Sauce, and Buldak Carbonara Hot Sauce.

If you want to get a hint of the flavor with some relief from the cheese, start with the Carbonara. It’s the gentler one, and Kim has said Carbonara is the flavor that gets the most love for its gentler heat. The Original, the classic black sauce, is my personal favorite. The 2X is sold as double the heat, and I’d only go there once you know the Original is your speed.

What to Put Buldak Sauce On

Chicken is the obvious one, given the name. Plain rice with a fried egg would let the flavor show without much else going on. Stirring it into plain instant ramen is probably the closest you’ll get to the noodle experience.

I’d also mix it into Kewpie. The yolk-only formula makes a denser mayo that keeps its shape when you add a hot sauce, which is the whole reason it works so well for spicy mayo, and our Japanese mayo vs. American mayo piece goes into the chemistry.

Buldak is one of the few sauces that earned its own challenge, and the bottle gives you that flavor without the noodles. Just keep a glass of milk nearby.
